Hmm. How about nandibble's Blood series? I think the most complete version of it is on her LJ, though it would take some shuffling through old entries. It's three and a half novels (sadly she died before completing the fourth one) and begins in the middle of S7.

I'm coming up blank on many long Spuffy stories set post-S7. At least, complete ones. Angearia started one, but I don't think it was ever finished. Most of the epic Spuffy stories I know about were set in seasons 5 and 6.
